To make this delicious Chicken Biryani, you will need the following ingredients:
2 cups of basmati rice
1 lb of boneless, skinless chicken thighs
1 large onion, sliced
4 cloves of garlic, minced
1 inch piece of ginger, grated
2 green chilies, chopped
1/2 cup of plain yogurt1 tsp of cumin seeds1 tsp of coriander powder
1 tsp of turmeric powder
1 tsp of red chili powder
1/2 tsp of garam masala
1/2 tsp of black pepper
1 cinnamon stick
3-4 cloves
2-3 green cardamom pods
2-3 black cardamom pods
1 bay leaf
1/4 cup of oil or ghee
Salt to taste
Chopped cilantro and mint for garnish
Marinate the chicken: In a large bowl, mix together the yogurt, minced garlic, grated ginger, chopped green chilies, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, black pepper, and salt. Add the chicken thighs and mix well. Cover the bowl and marinate in the refrigerator for at least 1 hour.
Cook the rice: Rinse the basmati rice several times until the water runs clear. In a large pot, bring 4 cups of water to a boil. Add the rinsed rice and cook for 8-10 minutes or until the rice is partially cooked. Drain the rice and set aside.
Prepare the biryani masala: Heat the oil or ghee in a large pot over medium-high heat. Add the sliced onion and sauté until the onion is soft and translucent. Add the whole spices (cinnamon stick, cloves, green cardamom, black cardamom, and bay leaf) and sauté for another minute. Add the marinated chicken and cook for 5-7 minutes or until the chicken is no longer pink.
Layering the biryani: In the same pot, layer the partially cooked rice on top of the chicken and spread it evenly. Sprinkle some chopped cilantro and mint on top of the rice. Repeat the layers until all the rice and chicken is used up.
