A Sweet Delight: Sticky Toffee Pudding Recipe

Sticky toffee pudding is a classic British

Ingredients:

1 cup chopped dates

1 teaspoon baking soda

1 and 1/2 cups boiling water

1/2 cup unsalted butter, softened

1/2 cup brown sugar

2 large eggs

1 and 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt


For the toffee sauce:

1/2 cup unsalted butter

1 cup brown sugar

1 cup heavy cream

1/2 teaspoon vanilla extract


Instructions:

Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.

In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them soak for 10-15 minutes.

In a separate bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a medium bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Fold in the date mixture, including the liquid. Mix until well combined.

Pour the batter into the prepared baking dish and smooth out the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

While the cake is baking, prepare the toffee sauce. In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir until dissolved.

Slowly add the heavy cream while stirring constantly. Bring the mixture to a boil and let it boil for 2-3 minutes, or until the sauce thickens.

Remove the saucepan from the heat and stir in the vanilla extract.

Once the cake is done baking, poke several holes in the top with a fork or toothpick. Pour the toffee sauce over the top of the cake, making sure it seeps into the holes.

Let the cake cool for a few minutes before serving. Serve warm with extra toffee sauce and a dollop of whipped cream or vanilla ice cream, if desired.
