2 large cucumbers
1/2 teaspoon salt
* 1/4 cup white wine vinegar
* 2 tablespoons extra-virgin olive oil
1 teaspoon sugar
1/4 teaspoon black pepper
2 tablespoons chopped fresh dill
(optional)
Instructions:
1. Slice the cucumbers thin, either
with a knife or a mandoline.
2. In a large bowl, sprinkle the sliced
cucumbers with salt and let sit for
10 minutes to allow the salt to
draw out some of the water.
3. In a small bowl, whisk together the
vinegar, olive oil, sugar, black
pepper, and dill (if using).
4. After 10 minutes, rinse the
cucumbers and pat them dry with
a paper towel.
5. Add the cucumbers to the bowl
with the dressing and toss to
combine.
6. Cover and refrigerate for at least
30 minutes, or up to a few hours,
before serving.
This refreshing cucumber salad is a
great side dish for summer barbecues
or picnics, or simply as a light and
healthy snack. Enjoy!
